Pork Roast with Berry Glaze

INGREDIENTS:

  • 1 large pork loin
  • 2 cups raspberries
  • 2 cups blackberries
  • 1 tsp thyme
  • 2 tbsp of crushed pecans

INSTRUCTIONS:

  1. Place blackberries and raspberries in a blender and blend until liquid consistency has formed.
  2. Preheat your oven to 392 deg. F (200 deg. Celsius).
  3. Place pork in oven pan and Rub thyme all over before topping with liquidized berries.
  4. Cover foil and bake for approximately 4 hours or until loin is tender.
  5. Serve with your favourite vegetables.
