- 1 large pork loin
- 2 cups raspberries
- 2 cups blackberries
- 1 tsp thyme
- 2 tbsp of crushed pecans
- Place blackberries and raspberries in a blender and blend until liquid consistency has formed.
- Preheat your oven to 392 deg. F (200 deg. Celsius).
- Place pork in oven pan and Rub thyme all over before topping with liquidized berries.
- Cover foil and bake for approximately 4 hours or until loin is tender.
- Serve with your favourite vegetables.
