Cranberry Rice Pudding

INGREDIENTS:

  • 1 ¼ cups rice milk
  • 1/3 cup short grain rice
  • ¼ cup cranberries
  • 1 vanilla pod

INSTRUCTIONS:

  1. Preheat your over to 302 deg. F (150 deg. Celsius)
  2. Pour the rice milk into a medium sized saucepan as well as the vanilla pod. When the milk has almost reached boiling point remove it from the stove and allow the milk and vanilla to combine for 10 minutes. Remove the vanilla pod.
  3. Place the rice and cranberries into a baking dish and proceed to pour the milk into the dish. Mix and then bake in the oven for about 2 ½ to 3 hours. Stir from time to time. This dessert can be served either warm or cold.
