Vegetarian Open Sandwich


  • 2 tsp Dijon mustard
  • 1/4 cup grated carrot
  • 1/2 cup broccoli florets (small)
  • 2 toasted whole-wheat English Muffins
  • 1/4 cup roughly chopped red bell pepper
  • 1/2 cup shredded Monterey Jack Cheese (Low Fat)


  1. Turn on oven (grill)
  2. Spread Dijon mustard over all sides of English Muffin and top with broccoli, carrots and bell peppers. Finish of with shredded cheese.
  3. Place under grill for a few min, or until cheese has melted.
