Chicken, Red Pepper and Avocado Focaccia

INGREDIENTS:

  • 18 inch focaccia
  • 1/2 cup roasted red sweet peppers, sliced
  • 4 thick slices roast chicken (cooked) 1/3 cup light mayonnaise
  • 1/3 cup mashed avocado

INSTRUCTIONS:

  1. Cut focaccia in half and spread both sides with low fat mayonnaise.
  2. Top with roast chicken slices, red peppers and mashed avocado. Simple yet delicious.
