- 18 inch focaccia
- 1/2 cup roasted red sweet peppers, sliced
- 4 thick slices roast chicken (cooked) 1/3 cup light mayonnaise
- 1/3 cup mashed avocado
- Cut focaccia in half and spread both sides with low fat mayonnaise.
- Top with roast chicken slices, red peppers and mashed avocado. Simple yet delicious.
