Chicken and Berry Salad


  • 1 cup chicken strips
  • 1 cup blueberries
  • 1 cup finely grated carrots
  • 1 medium sized bag crisp lettuce
  • 1 tsp canola oil
  • 1 tsp cayenne pepper
  • 1/2 tsp ginger
  • 1/2 cup raspberries


  1. Combine the cayenne pepper and ginger and spice chicken strips before cooking in a pan for approximately 5 minutes.
  2. In a large salad bowl combine the lettuce, carrots, blueberries, raspberries and cooked chicken strips. Drizzle with any fat free dressing and add salt and pepper to taste.
